I have a plethora of bok choy at the moment. I went searching on pinterest for some recipes and found several the look great. I also had some broccoli so I figured this recipe for Bok Choy with Broccoli would doubly help clear out some space in the fridge.
I have to say the recipe is really easy. I was only making the recipe for 3 so I estimated on the measurements some. I think I put in a little too much water, I did not measure, so I poured out some of mine instead of cooking until it evaporated. I did not want the veggies to get overcooked. My broccoli had really long stalks, so I cut my stalks off then split lenghtwise into 4ths.
It turned out great, the veggies were crisp and full of flavor. I will definitely be making it again. Here is the link to the original recipe from Linda's Low Carb Menus.
I am always looking for great vegetable side dish recipes and I have to say I really like this one.
