recipe search - bok choy

I have a plethora of bok choy at the moment. I went searching on pinterest for some recipes and found several the look great. I also had some broccoli so I figured this recipe for Bok Choy with Broccoli would doubly help clear out some space in the fridge.

I have to say the recipe is really easy. I was only making the recipe for 3 so I estimated on the measurements some. I think I put in a little too much water, I did not measure, so I poured out some of mine instead of cooking until it evaporated. I did not want the veggies to get overcooked. My broccoli had really long stalks, so I cut my stalks off then split lenghtwise into 4ths.

It turned out great, the veggies were crisp and full of flavor. I will definitely be making it again. Here is the link to the original recipe from Linda's Low Carb Menus.

I am always looking for great vegetable side dish recipes and I have to say I really like this one.

Sickness Strikes

Due to a series of colds, vacation, more colds, house guests, and now the stomach flu, I am way behind on my posts. I am working on it, and very thankful that it is looking like this stomach bug is finally going to leave us. I have still been pinning away and hope to have the blog running soon.

kid time - marble painting

I found this idea for marble painting on Pinterest. I figured, we have a box, we have paper, we have paint, and we have marbles; why not? It is a really easy project, and the mess is self contained.  Basically you get a box, put in a piece of paper, squirt in a little paint, toss in the marbles and roll it around. I didn't really count on Preston being upset that his marbles had paint on them. He calmed down when I promised him I would get them clean. He seemed to really like rolling around the marbles, then deciding when his pictures were done. His pictures are really cute, I think we will be using some for our valentines.

food time - fritatta

This is one of my go to Internet recipes. I have made this Crustless Quiche numerous times. I do mix it up a little and do not always follow the exact recipe, but the egg to milk ratio is perfect, as is the temperature and cooking time. I found this recipe because I was looking for something to do with all of the Swiss Chard that we get from our CSA. I pretty much use whatever veggies I have on hand, and sometimes a little bacon. Adding more veggies to this recipe is not a problem. I have added broccoli, potatoes, asparagus. I have used red onion instead of sweet onion. I also never use as much cheese as the original recipe calls for. This is a super easy, healthy meal. I usually serve it with some bread and a salad or some pasta.

Swiss Chard Crustless Quiche Recipe
adapted from original recipe @ food.com

1 tablespoon olive oil
1/2 onion, chopped
1/2 - 1 bunch Swiss chard
1 cup grated cheese
4 eggs
1 cup milk
salt and pepper to taste

Preheat oven to 375 degrees

Wash and dry Swiss chard (you actually do not have to dry too thoroughly). Cut off the ends of the stems, chop remaining chard.

Add onion and chard to the olive oil and saute until stems are tender. Do not overcook.

In a bowl whisk eggs and milk. Add salt and pepper to taste.

Oil a pie dish.

Spread vegetables into pie dish. Sprinkle cheese over vegetables, then pour in egg mixture. Make sure it is all spread evenly.

Bake for 35 - 45 minutes or until golden brown and no liquid seeps when poked with a knife.

breakfast bars


While Internet browsing I found a recipe for Nigella Lawson's Breakfast Bars. I have made these before, but it has been a long time. I forgot how delicious and easy they are. You can literally throw them together in about 5 minutes, but they do take an hour to bake. I love them because you can easily adjust what goes in them, I tend to not put in the peanuts and add more seeds or a few chocolate chips. I am still trying to convince my kid to try them, he is in a really picky stage of eating where he is not big on trying new things (or sometimes old things). If he would just taste them they really are as good, even better than the granola bars that come in a box. Mine always seem to pool a little of the condensed milk on the bottom, I think next time I may try and use a little less. As an attempt to try to make the bottoms a little less sticky from the condensed milk, I put some back in the pan upside down, and put back in the oven at 300 degrees for about 15-20 minutes. It did seem to help, the bottom still looks coated by the condensed milk, but they are not as sticky, and crunched up a little bit. I like them.

a clean house - for our fish

It is not really my goal to specifically promote products on this site, I am completely in love with this vacuum for our fish tank. I am the one who cleans our fish tank, and I have always had a suction vacuum tube to change the water, I was looking for something to suck out all of the junk in the gravel between water changes. I decided to give the Eheim Quick Vac pro a try. It came yesterday and this morning I sucked out our beloved Salsa's tank. I am amazed at how much junk was pulled out of the gravel, even without having to change the water. I will keep using it for quick touch ups, but I also think I will use it when I do water changes too.
I am happy that our little fish has a nice clean home, and it will be easier to keep it that way.

Welcome to pin a day. As I wander around the Internet; blogs, pinterest, food gawker, etc. I realize that I wish I was truly more creative with my days. Yes I am busy, I am a mom, I am usually doing things for everyone else so I am vowing to do something for myself. I am going to do all of those things I wish that I had time for. I will make time. I will get back to my creative side. I will get healthier. I will cook more. I will be more organized. I will be happier. I will be a better wife and mom. I am going to be the person I am on Pinterest (okay I probably still do not have that big of a bank account).
